You can check whether a person has read the email, whether in their personal mailbox or in a shared mailbox.

You can use the Graph API or EWS to check the read status of a message, see my answer in this thread: https://learn.microsoft.com/en-us/answers/questions/1664535/tracking-read-status-of-email-messages-in-exchange
