Thank you for posting your question here! I understand that you're hoping to find a way to see what files have not yet been labeled by a sensitivity label. One of the ways you can do this is by creating a File Policy in Microsoft Defender for Cloud Apps and using the filter "Sensitivity Label - Microsoft Infromation Protection - is not set", as seen in the image below.
This assumes your files are cloud based (files in Teams are actually stored in SharePoint and OneDrive).
