Inconsistent Data product behavior

The issue you're experiencing seems to be related to a disconnect between the data asset deletion and the data product's interface. Even though you've deleted the data asset, the data product still shows it due to existing data quality rules attached to the deleted asset.
Since the system indicates that the data asset has quality rules attached, try navigating to the data quality section to check if there are any residual rules that were not automatically removed when the asset was deleted. If possible, manually remove or disable those rules.
If the interface does not allow you to resolve this, consider checking if there is an API or backend tool available that allows you to manually clear "orphaned" data assets from the data product list. Some systems require a manual cleanup of such inconsistencies.
If there's an option to force a refresh or rebuild the index of your data product, it might help sync the UI with the actual state of the data

Thanks for your suggestions. I've tried the API, but it's currently only for the Data Plane, so there's no way to interact with Data Products and Governance Domains.
I've also thought about creating an object with the API with the deleted GUID to trick Purview and, once it has access, remove the data asset from the data product, but the Purview API doesn't allow forcing the GUID.
I think the only solution right now is to open a ticket with Microsoft and hope they can get into Purview (which is what I'm going to do).
