E5 license services to pick to ensure that email DLP will work correctly

What services should be enable within the E5 License to ensure email DLP works correctly. Any list or source to refer would be great help.

Here is a link from Microsoft that I recommend saving, which highlights licensing requirements for Exchange DLP as well as many other security and compliance features.
To answer your specific question, however, please make sure the "Exchange Online (Plan 2) feature is enabled if you have the E5 license.

Does Exchange online (Plan 2) is enough to configure DLP policies, Because I do not want to use all the services from E5 License. To be more precise I am assuming I can configure DLP policies by thinking I can utilize all features exchange/email DLP by just using Exchange online (Plan 2) from E5 License.

as far as using exchange and dlp, yes that one feature will achieve that for you. However, please note that disabling features within the license could have unintended consequences. If you disable Microsoft defender for office then you may not be able to leverage best-practice email security controls, or if you disable Azure Information Protection you will not be able to leverage sensitivity labels. Just please check each feature before disabling them.
