Meeting query
Does the meeting query (https://learn.microsoft.com/en-us/viva/insights/use/metric-definitions#meeting-metrics) get data from the information in the Outlook calendar? Or is it possible to obtain data on the actual results of the meeting (If the meeting was posted from 10:00 to 11:00, but the meeting ended at 10:30, it would be 30 minutes)?

All results obtained are aggregated across the specified team/group/date range that is specified in your query. I do not think that the actual time is recorded, specifically for a Meeting Query.
