If the device is managed, policy can be used to extend the timeframe for up to 90 days. (https://docs.microsoft.com/deployedge/edge-ie-mode-local-site-list#policy-internetexplorerintegrationlocalsitelistexpirationdays )
If the device is unmanaged, you cannot extend past 30 days. On day 31, when users navigate to the site, they will see a banner explaining that the site will no longer load in IE mode. On the banner, users can select to add it back to the local site list if they so choose for an additional 30 days. This process will repeat every 30 days until the user opts to not add it back to the list. If they opt out, they can always add the site back to the list by following the same process as they previously did to reload the page in IE mode.
