Windows 10 IoT Enterprise LTSC 2021 follows the Fixed Lifecycle Policy and has a mainstream end date of 12-Jan-2027 (also same end date for Windows 10 Enterprise LTSC 2021).
Windows 10 IoT Enterprise follows the Modern Lifecycle Policy, so the support end dates are as per Windows 10 version release end dates (9-May-2023 for 20H2, 11-Jun-2024 for 21H2, 13-May-2025 for 22H2).

Windows Server 2019 follows the Fixed Lifecycle Policy for all editions (Datacenter, Essentials, Standard) and installation types (Core or Desktop Experience), and has a mainstream end date of 9-Jan-2024.
Hyper-V Server 2019 also follows the Fixed Lifecycle Policy and has a mainstream end date of 09-Jan-2024 (same codebase as Windows Server 2019, just with a limited set of features that can be enabled).
09-Jan-2024 is also the end date for Windows 10 Enterprise LTSC 2019, given it's the same codebase as Server 2019.
