[Update: 11/03] - I was doing further research and encountered "Limited Access Policies for SharePoint" https://techcommunity.microsoft.com/t5/Azure-Active-Directory-Identity/Conditional-Access-8220-limited-access-8221-policies-for/ba-p/245228?lightbox-message-images-245228=46518i710291C45B4DD494 . they seem to show a similar warning message to the one in the screenshot below. so perhaps the site in the demo has had limited access policy applied to it (either manually or automatically as a result of the site classification label)

so in the mechanics video (see screengrab below) the "confidential" site label is metadata , and the protection on the site has been configured seperately using RMS (?) or AIP or DLP at the site level? Can a the warning label be displayed on the site home page using OOTB configuration?
