Mark-Kashman - it would be really great if we could get more detailed information about the new site creation process. The screenshots do not make it clear how I will create a new site that uses the Team site template that is not connected to an M365 group via SharePoint Admin centre.
Will the only option be for me to create an organisation specific site template to do this?
I understand the point of the change for is probably targeted to organisations who allow anyone to create sites. The changes shown in the screenshots make sense if the new experience will result in an update to information on the SharePoint Help and Learning Centre page - https://support.microsoft.com/en-us/office/create-a-team-site-in-sharepoint-ef10c1e7-15f3-42a3-98aa-b5972711777d.
For organisations who implement more controls and only allow admins to create sites, I can't see many benefits to the changed interface if this new experience will also be replacing the one that's currently in SharePoint Admin UI.
