Hi Dave Mundey - I found your ticket that you logged using Help > Contact Support. In the ticket you noted you have retail license and were trying to convert to O365 subscription. Have you purchased subscription now?
Presume you previously activated Office on Mac using retail license. If you purchased / converted to subscription after that, you can use this tool to remove license on your Mac: https://github.com/pbowden-msft/Unlicense. Then launch any Office app and activate using your subscription account. You should then see the subscription license under Outlook > About dialog:

Once that's done, you will be able to add your Google account again and it'll sync Mail, Calendar and Contacts. In Tools > Accounts dialog you should see the Google icon and "Google Account" description indicating you have the correct account type (and not IMAP which only syncs Mail).
