I have similar feelings about storing my stuff on someone else's server.
I addition I frequently work in a location where there is no internet and it is really impractical to work offline when all your data is online.
I also have trouble using any of the office products if I have been at this location and MSOffice (Outlook included) seems to want to check that I have a valid licence, even though I have paid for 12 months upfront and I am only 3 months into that 12 months.
I get messages like "You need to activate your licence! you can't save the document without activating your licence." or words to that effect.
Once I have an internet connection and I have signed into my Microsoft Account, my Office programs (Outlook included) work correctly without any issues.
As a result, I have installed Open Office and I can at least work on most of my documents then convert them to Office documents when I get back to civilisation.
Does anybody else have this problem?
The reason I bring this up is I am a photographer and will soon be doing a long extended trip into areas where there is no internet.
