If this is your 'work' laptop it might be due to the Administrator setup at work. May want to ask the people who manage your laptop about that. Some administrators setup your apps for work functionality. It is possible that Edge is there and you don't see it.
Couple of ideas :
1. Click your 'Windows' key (lower left) and start typing 'Microsoft Edge' . If the new Edge is there you can right click on it and decide where you want it.
2. Click your 'Windows' key and type 'Settings' . Click on the word 'Settings and then click on 'Apps'. Click on Default Apps on left panel and scroll down on the right panel until you see 'Web browser' category. If you click on the icon that is already there you should be able to choose which browser will be be default.
Depending on you place of work some settings may be 'locked' and the administrator will need to look at your setup .
