Create blog Jon! 
In activity explorer I do not see any ChatGPT Enterprise AI Interactions even though the scans are picking up assets. Thoughts on why this is?

The most likely reason is that SSO hasn't been configured with Entra, SSO Overview | OpenAI Help Center. We map the Object ID, Account ID, UPN based on the federation detail to store the prompts and responses correctly. If that is not the cause send me a private message so that we can get more details.
