Sentinel is used in Incident management to respond reactively to different threats such as breach and be able to analyze the anomalous activity to disrupt ongoing attacks and recover. Exposure Mangement is used to assess your internal and external attack surface to predict attack paths so you can proactively stay ahead of threats.
