Best practice examples for configuring macOS apps with Microsoft Endpoint Manager

One thing I'm finding hard to follow...

I'm trying to set MS Word templates, and while the com.microsoft.office.plist file for this setting sits in /Library/Preferences/, when I push the Preference File from Intune it creates an entry under:

 /Library/Managed\ Preferences/com.microsoft.office.plist

How can I set the location the .plist file should be created in?

Or, how can I force Word to check the new .plist file location?

Also, is there a way to use env variables with the .plis file? It seems to be adding $HOME as $HOME instead of /Users/myusername.
