I have the same issue on my new laptop with Windows 11, and the problem persisted even on Linux Mint Cinnamon 21.
More info is below.
 
Symptoms:
The wifi adapter fails unpredictably, sometimes it doesn't connect to my home wifi, sometimes connects-disconnects, and sometimes works stable for a couple of days. When I go to restaurants, my laptop struggles to connect to the public wifi even worse. What is interesting though is that when I share the internet via my phone (hotspot), the computer connects perfectly with a stable connection.
 
Tried solutions:
I have tried to do almost everything I found on the internet, namely:
- resetting the wifi adapter
 - enabling/disabling the wifi adapter
 - updating/rolling back/changing the drivers of the wifi adapter
 - restoring windows 11 to the initial condition
 - connecting to the different wifi point
 - physically removing, cleaning, and attaching the wifi adapter
 - manipulating the power settings
 - and many more that I cannot call to mind
 
Interesting Observations:
- I've installed Linux Mint Cinnamon 21 on another SSD drive to make my laptop dual boot, and the connection problem persisted even on the other Linux OS.
 - This problem wasn't present "from the box". It happened after some update
 
Hardware:
- Acer Aspire 5 A515-46-R3UB
 - Network adapter: MediaTek Wi-Fi 6 MT7921
 - Added a 512 GB SSD and installed Linux Mint on it
 
 
Update:
I removed Windows 11 and installed Windows 10, but the problem persists. P.S. I didn't migrate any files or settings from the removed Windows 11. 
The only solution left seems to be replacing the wifi adapter, otherwise, I'll throw my brand-new laptop in the trash.
