Is it possible to set the variable WORDPRESS_MULTISITE_TYPE with the value "subdomain"?, to implement the wordpress subdomain option?

For a single site, yes. But you cannot convert a subdirectory multisite to subdomain multisite and vice-versa. Also, once you have converted your site to multisite, you can't go back to single site.
