The specifications of the server system we currently have are as follows.

CPU: Intel(R) Xeon(R) CPU E5-2620 v3 @ 2.40 GHz (6-core 12 threads)
Mainboard : Supermicro X10SRL-F 1.01B (Intel Haswell-E/X99)
Memory : DDR4-2123 16G 8ea

Previously, I was running Windows Server 2012, but due to the end of technical and service support,
I would like to upgrade my software.

Please recommend the best version.

Unfortunately, it looks to be a desktop only board.

this doesn't mean it won't or can't work but does mean the vetting of all components and drivers is left to the end user to do. In the end it's still an unsupportable system.
