I have the same issue with my MacBook Pro 16 inch - 2021. Microsoft release notes said that this is the issue that they were aiming to fix in this update, instead they broke it completely.
Furthermore, release notes say that if you encounter any issue, you can contact us via Help > Report an issue.
Report an issue option does not even exist in the Help menu in the MacOS RDP App, all I see under Help menu is Documentation and Submit Feedback.
