My customer has several subsidiaries under the same tenant. Is it posible limit the data that a user is consulting with the promps so they don't have access to data that doesn't belong to their subsidiary?

CfS works on behalf of the permissions that have been granted to an admin. If the admin does not have access to the data in the subsidiary, they will not have access to it in CfS.
