WSUS changing Update Source on its own

If this WSUS server is also a Configuration Manager Software Update Point, this behavior is expected.
ConfigMgr's WSUS Configuration Manager (WCM) periodically enforces the WSUS configuration defined for the Software Update Point. Microsoft documents that WCM connects to WSUS roughly every hour and reapplies the SUP configuration, including the update source.
So changing it manually in the WSUS console can simply be overwritten again.
Check WCM.log, WSUSCtrl.log and WsyncMgr.log, and configure the desired upstream source in the Configuration Manager Software Update Point properties rather than directly in WSUS.
