You can search the audit logs for Microsoft Stream activities down towards the bottom of the list, is a Viewed Video. Then you can filter by item name and get a list of who watched what.

Hi - what is the new way to do this please?

It has been migrated into 3 different systems now. To be find viewers you go to the Microsoft Purview and from there you go to Audit and you can pull information based on your search criteria. I just choose the date range, Activity (Viewed Video), and File, folder, or site (I copy the direct link to the video). then hit search, it ques the search and builds the data for you.

For anyone coming along later (currently 2024), the new Stream experience apparently does not track viewers the same way. I went in to the (also new) Purview to run a search on a video that has 3 views...nothing.
Oher posts in other MS forums have noted the same.
The SharePoint-backed Stream apparently does not track Video Views.
