Hi Paul, I did open a ticket with Microsoft to request the rollback. After providing a 'business case' for rolling back they did just now complete the request, thankfully. So I am now officially on my Island.
Took 7 days but it is done.

Ok - that's what already some reported that you can't roll back via PowerShell.
I would suggest you open a support ticket and check if there is a chance.

We have the same issue after the migration of our tenants in Teams Only mode.
The support team gave us the following procedure to rollback:

How to change the coexistence mode of Teams back to Islands, so you can resume working on Skype for Business. We can do this right through your admin portal.First, ensure you are on the new admin portal. Next, cluck the "Need help?" widget, and type "teams upgrade" in the issue description box. A button should pop up with "Run tests" printed on it; clicking this should run a quick diagnostic.When that is done, a box with a button marked "Update settings" should appear. Clicking this should roll you back to Islands mode, which will allow you to use S4B again.This is a temporary rollback. It gives you 30 days to prepare for the update to Teams.---------We are working now with them to check if this 30 days period can be extended 🙂Thanks a lot to Microsoft' support team and to you for this thread.
