How are people monitoring Audit logs for multiple Github organizations?

When I first setup the data connector for Github we had one organization. We now have five different organizations and I don't see a way to forward the logs for all of them to sentinel using the connector from the content hub.

Looking for some insight as to how I can monitor all orgs. The one azure function I did find was not very good.
