Hide Organization Section in Delve

Cory, (If I understand you correctly) All of the fields that are presented in a users's profile within Delve are really just properties from the USer Profiles within Sharepoint.
SP Admin Center > Manage User Properties> New Properties > and making sure "Show in the profile properties section of the user's profile page" is checked.
I believe you can make the field (department in this case) hidden (uncheck the "Show in the profile properties section of the user's profile page" and "Show on the Edit Details Page"

I agree with Bill Diekmann, the only way to go AFAIK is by manually configure if you want a specific user profile property to be displayed or not in the user profile and consequently in Delve
