Delve within a site
@Anat Tolkowsky Delve will search and get the all documents where you have the sufficient permissions. Your question will touch the SharePoint features indirectly. Answer for your question is "No , we dont have control on it".
Delve introduced by the way how we collaboratively working with our organization members , sharing the data. ..etc.
May be someone for Delve Team will give the upcoming implementaion on this.

What about the HideFromDelve work-around (http://www.learningsharepoint.com/2016/06/23/how-to-hide-documents-from-delve-office-365/)? Wouldnt this be a way to hide select content from Delve?
I'd also be interested in knowing if this would also hide this content across other areas, like the new "Discover" feature within ODFB, or what you see when view a user's profile within SharePoint (which shows which documents an indivudal is working on). Seems Office Graph is making its way across many other workloads, and Delve is not the only thing we need to worry about in terms of content being promoted/pushed in a potentially undersiable way.
