Can I change search scope to Organization-wide across the tenant?
I understand that search scope can be set on a per-site basis but was hoping to change the default search scope on all the SharePoint sites in our tenant to Organization wide. Is this possible?

cgreen1 No and yes. You can't set this to be default on new site collections but you can run Set-PnPSearchSettings -SearchScope Tenant on all existing site collections. You will have to run that command on new sites from time to time, or add it to your provisioning tool, if you have a such tool.
