The device OS version displayed in the Microsoft Defender portal is incorrect.

Hm, onboarding a Windows 7 machine to MDE was a more involved operation (using Microsoft Monitoring Agent). An in-place upgrade to Windows 10 might cause some troubles too. If the device is still onboarded (when did it last check-in to Defender XDR?), I'd offboard it and then onboard it again using the usual options (GPO, Intune).
