I started using the new Outlook at my organization when the toggle was made available. Then I noticed there was a lot of instability due to Microsoft's rapid development, even though I liked the new look and feel. For example, the buttons would move around, or the UI would behave differently after a couple of weeks of stability.
I switched the toggle back for a few months and when I switched back to the new Outlook again, it was much more stable. That was about 5 months ago. I haven't looked back since! I love it now, even if there is a bit of weird behavior now and then.
So, my experience wasn't about disliking the new look and feel. I just wanted it to be stable. Now I want them to improve the image insert process. That keeps changing. I also want them to change the bulleted and numbered list behaviors. The indenting is a bit off sometimes, as well as new line spacing.
