How do I exclude certain part of email from being scanned?

It sounds like you’re dealing with a common issue when using sensitivity labels with email signatures. Unfortunately, there’s no direct way to exclude the signature part of an email from sensitivity labeling checks. However, there are few workarounds you can consider:
Quick solution for this would be adjusting detection rules by increasing the number of instances within condition. E.g., if you have 1 name and 1 address in the email signature then increase the number of instances to 2 for both.
Another option is try to add SITs that are triggered by the signature in a separate group within the condition.
You could try adjusting SITs or create custom ones but you have to keep them up-to-date.
If you are using Trainable Classifiers, you can try to provide feedback within the Classifiers page for these matches.
