Insert Online Video is missing
In case anyone has the same issue, I spoke to our Network Admin who manage our installation of Professional Plus 2016, who discovered that their updates didn't include the update that brings 'Insert Online Video' to OneNote, and there were no plans to do so.
So the whole school has to uninstall the Professional Plus 2016, and download and install 365 ProPlus! Individual teachers will now have to update their own installations.
At least I now have Insert online video- which is the only way to embed forms, sways etc. in OneNote.
I hope this helps anyone who's interested.

I'm running Professional plus- it seems bizarre that there's a difference- especially when one name is a shortened version of the other!
Now I know why my version doesn't have an update button, what do I do about it?

Having this same issue, I'm going to have a hunt for the update(s) but if you could share what it is/they are, that would be very helpful.

You need to completely un-install Office Professional Plus 2016, and instead install Office 365 Pro Plus. They are different versions of Office. This will have all the new features.

Unfortunately we don't have that option here as we are not licensed to use ProPlus. :(
