For the text file, please note that '.txt' files are only supported for inspection in the presence of the Information Protection client on the endpoint:

In the case of the word document being uploaded without being labeled, it will not inherit the email's label automatically but it can inherit the encryption settings.
Any sensitivity label from the email message or meeting invite is not inherited by the attachment but could be automatically applied when a user in the same tenant opens the document.
