- Can't think of any, just change the domain in Active Directory and allow it to sync up using AAD Connect, not having the actual 'domain' in Exchange is quite normal for Hybrid exchange, then you can plan for the cutover at a later date.

- yup sounds good to me. Like always just make new users on prem vs in the cloud and should be no issue
