Dev Ops User Display Name

Good morning Dev Ops Community,

New here and first post. I am also new to Dev Ops and it's a steep learning curve. Hoping maybe someone can help.

I am assisting a 3rd party with their Dev Ops and in the Org a user was accidently deleted., but then appeared to be in a 50/50 state. I installed Azure CLI and the Dev Ops extension and checked the user details with -- user show and then removed it. 

The user removed and could not be located with user show. I have then tried adding back the user 
(AAD user) manually with the 'Add' and also via CLI, but whenever being added back the user Display Name and profile image display this

Instead of this (initally when selecting the user)

I have checked AAD with Powershell, tried Graph and to see if there are any Dev Ops commands, but it will not change. Can anyone let me know how I can correct this and where it is being pulled from?
