App Service - Plan Change to Zonal - Best practices & Recommendations

I am looking for the best practices for updating App Service plans to zonal with no/minimal downtime.

Scenario

Currently, App Service plans hosts Web APIs behind APIM. Planning to update the App service plan/apps to zone redundant for increased resiliency.
