Amend Discipline/Activity picklist

Is it possible to amend the Discipline/Activity picklist under Capacity?

We run ADO cloud and are using CMMI process so our field is called Discipline and is limited to the following options:

Unassigned

Analysis

Development

Test

User Education

User Experience

This doesn't totally cover what we need but I have struggled to find anywhere to amend this.  Is it possible?
