Hey Sarah and anyone else looking at this--

The version of PowerShell in a non-updated Windows 7 VM will not have the Add-WindowsPackage cmdlet. As a workaround, use dism at the command prompt, e.g.:

dism /online /Add-Package /PackagePath:D:\windows6.x-hypervintegrationservices-x64.cab
