Excellent blog hobru. There is recent announcement at OpenAI (on your own data) and PVA Agent about deploying Power Virtual Agent directly from OpenAI Studio if you are using Azure OpenAI with your own data option.  As you mentioned under future scope this will be good use case for using Cognitive search for searching your SAP data. You can then add flow logic to update SAP data.
