Hi rudyvanderlinden to answer your question, i have laid out the info from what i know in the MS Roadmap and understanding of where Microsoft is leading toward Unified approach for Classification.
1. Since you are starting fresh with AIP Project, its an ideal situation where you must not deploy AIP UL client and work through with the available functionality till date with the alternate solution detailed in my answer #2.
2. Microsoft has already started shipping Sensitivity Client (Poplularly known as Built-in Client) in Microsoft 365 App Enterprise Channel. Hence you do not need to deploy a client separately. This though simplifies the deployment process, but there are lots of feature parity between the UL client which Microsoft is trying to close. Most important feature parity is the File Explorer Extension -> Right Click ->Classifiy protect that is not available in Built-in client and perhaps this is the only way to classify non office file types (.jpg, .pdf, .txt, etc.
3. You may still deploy UL client to support non-office files till this feature is made available in the built-in client
4. AIP Scanner still be deployed using AIP UL Client but Microsoft is replacing this with Purview Discovery (Preview) which is intended to replace the AIP Scanner in near future.
5. Existing deployment of UL Client may not require un-installation as Microsoft is planning to bring a new office/Windows build that will automatically disable AIP UL client and its corresponding office Com-Addin.
