Our customers ask us how much an Exchange SE installation costs from a licensing point of view because we have no visibility on an estimate to propose to our customers.

agaoua, you should probably speak to your Microsoft licensing specialist. This took months for me to sort out; but I don't really want to add any information here because your environments and licensing requirements may be wildly different than mine (others).
LOL! Who did you speak with? Our LAR and our CSAM could find no one that was able to share any info. We had to assume Exchange 2019 costs are in play for our budget. But like you said, it will be different per org. Some implementations may be free (hybrid) and some may not.
toddnelson-work, our resolution was that since there was no pricing for SE at that time (not sure about now), that we could push the question out nearly 5-6 years by licensing Exchange 2019 with 3-year SA (and the at-least (at-most?) one SA renewal of 3-years).
