The only time this might be an issue is if you need to do a /Recover setup as per the KB article talking about the issue in January SU. Now - once your servers are on the February SU, versions issues will get sorted out as evidenced by Health Checker run. The Health Checker does not look at AdminDisplayVersion because this is something that until January SU did not change with the installation of an SU, but would change only when a new CU would be installed. Seeing that Exchange 2019 is the only version that will get CUs in the future, the AdminDisplayVersion problem will get solved there when the CU is installed. But for older versions of servers, the AdminDisplayVersion will stay to what January SU set it to and this is not a problem (it is only cosmetic) unless you need to run a /Recover setup in which case the KB article tells you how to change the AdminDisplayVersion via PowerShell. But you do not need to proactively worry about this, it does not affect anything other than /Recover setup.
