Renat Matveev Our detailed recommendations for Exchange server published by hybrid agents can be found here. You can enable EP on that server, but not on the front-end virtual directory (/DoNotEnableEP_FEEWS) which - as it seems, could also address your other EWS related issue. Note that in our recommendations, we expect that the "hybrid server" does not host mailboxes.

Now - on your question about switching modes. Yes, this is possible. Here is how. See the section called "Uninstall the Hybrid Agent".

As of right now, there is no solution to make modern hybrid "fully compatible with EP" because by its very nature, modern hybrid agents is an App Proxy which is a "main in the middle" scenario that EP is trying to prevent.
