We've raised a Unified Support ticket for this months ago but despite weekly chasing and making it high severity it will apparently be July before this is fixed by the product group 😞 With hundreds of mail enabled public folders, many of which have multiple SMTP addresses and folder assistant rules associated with them, I'm reluctant to start messing about with them.
Our customers have pretty much given up on us being able to send an email to them with the correct email address on it. It's not a good advert for Microsoft's email platform or their ability to fix issues which are seriously impacting to their customers.
