I agree that the mailbox rights tab and public folder management are must-haves. We have no desire to move to Sharepoint.
I think the "Complex filtering for address lists, etc." should be kept also. Constructing a complex LDAP query is difficult, so why would you throw out something that's already written that makes it easy?
Supposedly content indexing is much better in Exchange 2007, so the management interface might get used if you left it in.
