I already have my lab running each Exchange 2007 roles on windows 2008 64-bit. The only problem was the cluster piece which now no longer accepts virtual shared disks as this was the case with windows 2003 cluster requirements. The windows 2008 cluster has much more demanding requirements. (had to resort to iSCSI in order to get the cluster going). Hyper-V looks really nice and promising but its not quite ready yet...:)
