How to Manage Microsoft Defender on Windows Server via Intune

Unfortunately, we have faced a few issues with this architecture. It would be great if you can advise anything here:

When we create a policy on Intune and assign it to a collection, devices in that collection get the policy. But if we do a minor change in the policy, it never comes to the devices. For example, we disable GUI using Intune policy and in a few hours we see that GUI is disabled. But if we remove the assignment, GUI never gets back. Only the removal of the Registry key helps in this situation.
