Is there a way to automatically set a daily schedule so that each day when I leave the office my automatic reply is on and active but then turns itself off each morning without me having to go in and set it daily?

Not an OOTB way, but you can easily script something like that via PowerShell, or use Flow/Power Automate if you prefer.

have a look at ScheduledOOF flow for Office 365
