2nd Hybrid config wizard

I would like to move my single 2016 Exchange server to AWS.  My environment is setup so that all mailboxes are in o365 already but we simply use the on-prem as a 

Hybrid config server and admin server.  I considered doing a lift and shift to AWS but I believe a more supported method would be to spin a new server, install exchange and setup config wizard again.  My questions is, will an evnrionment support multiple hybrid config servers at the same time?  Knowing that I will be decomissioning the on-prem once it's safely in the cloud.
