We would like to try this with our voice application. How do we sign up to try it and how do we find out the pricing?

You can visit https://speech.microsoft.com/customvoice and there is a "Apply Now" button for the service. You can find the pricing here: https://azure.microsoft.com/en-us/pricing/details/cognitive-services/speech-services/.
