Hello together!
We are a team of 15 people and we have to produce a documentation that will probably be 600 pages long. Is it possible to create and edit this document in SharePoint at the same time? Or would it be better to work on different documents and combine them in the end? Is word "strong" enough for such a scope? Or is there an even better solution? Thank you in advance for your ideas!

You can certainly edit a 600 page document in Word, unless it is very complex. However, I wouldn't dare to use the online version of Word for this task. Work with the document locally instead, and use the full version of Word.
